What happens when you cross the season’s most in-demand coffee, pumpkin spice latte, with pumpkin pie? You get a creamy and delicious breakfast treat that is packed with rich pumpkin spice flavors to keep you and your family satisfied all morning long! Our friend, Carmen, over at Every Last Bite has created this recipe for Pumpkin Spice Overnight Oats, that we know you will love. All you need is 5 minutes and 6 simple ingredients to make these overnight oats. These are great on-the-go breakfasts you can enjoy anywhere.  The oats will last up to 4 days in the fridge, so make a double batch and you have breakfast for the week, so easy!

Pumpkin Spice Overnight Oats

Servings 1

Ingredients

  • 2/3 cup pumpkin puree
  • 2/3 cup almond milk
  • 3/4 cup oats
  • 2 tbsp. chopped pecans
  • 1-1/2 tbsp. organic honey
  • 1 tsp. pumpkin pie spice

Instructions

  • In a bowl combine all of the ingredients and stir until well combined.
  • Divide the mixture between two jars or cups, that will hold over 8 oz. 
  • Cover and place in the fridge for a minimum of 4 hours but ideally overnight. These oats can be stored in the fridge for up to 4 days.
