Just when you think that there could be nothing better, smoother, or more satisfying than spooning peanut butter out of the jar… Dada Eats by Samah brings us: Salted Peanut Butter Freezer Fudge! It's vegan, gluten-free and refined sugar-free.

It’s been on my list to develop a recipe for freezer fudge, but I think my subconscious was waiting to do it until the summer months when it just gets too hot to turn your oven. And let me tell you, it was worth the wait because when you want something smooth, creamy, and cold, my freezer fudge is it. And more! Because it’s also vegan, gluten-free, and has no refined-sugar. You’d never believe it.

The best part about this Peanut Butter Freezer Fudge is that it has only 5 ingredients and comes together in a matter of minutes. The base is made up primarily of peanut butter, with a bit of coconut oil, and a touch of maple syrup (one of my favorite unrefined sweeteners!) for sweetness. Along with some vanilla and flaky sea salt, it has the perfect combination of sweet with a hint of salt that makes it the best chilled snack or dessert.

I’ve been eating peanut butter on the daily since I was little — from PBJ sandwiches everyday in elementary school right on up to this day in the form of my Freezer Fudge (how we’ve evolved!) I really am in love with the versatility of peanut butter and how it can taste amazing in so many recipes, whether it be savory or sweet. It’s creamy, affordable, packed with protein, and it’s just an amazing, nostalgic staple ingredient that I always have in my pantry!

Note: this fudge is meant to be stored & kept in the freezer, and will melt if left out! I love to prep this for the week so I know I’ll always have a peanut-buttery sweet snack in the freezer when that craving calls.

Dada Eats Salted Peanut Butter Fudge

Ingredients

  • 3/4 cup creamy peanut butter
  • 1/4 cup coconut oil, softened
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • flaky sea salt

Instructions

  • Prepare a 9 x 5 loaf pan by lining with parchment paper.
  • In a medium bowl, mix together creamy peanut butter, softened coconut oil, maple syrup, and vanilla extract.
  • Transfer fudge to prepared pan. Sprinkle with flaky sea salt.
  • Freeze for 20 minutes or until fudge is firm. Finish with more flaky sea salt and serve!
  • Store in freezer as it will melt if left out!
