Savory Whipped Cottage Cheese
Ingredients
- 2 tbsp extra virgin olive oil
- 1 tbsp red onion, thinly sliced
- ¼ cup grape tomatoes, sliced in half lengthwise
- 1½ cups full-fat cottage cheese
- ¼ tsp Kosher salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground cayenne pepper (optional)
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- Sliced bell peppers
- Cucumber slices
- Crostini
Instructions
- In a small skillet, add the extra virgin olive oil and heat over medium heat. Add the onions and sauté for a minute. Add the halved grape tomatoes, lower the heat if needed, and cook tomatoes until soft. Remove from heat and set aside.
- In a mini food processor, add the cottage cheese, salt, pepper, garlic powder, onion powder, ground cayenne pepper (if using), and lemon juice.
- Blend for about 1 minute or until the mixture is smooth and creamy.
- Transfer the cheese mixture to a small serving plate or bowl. Use a spatula to smooth the top of the cheese mixture.
- Spoon the cooked tomato and onion mixture on top of the smoothed cheese. Use the reserved oil in the skillet to drizzle over the cooked tomatoes and onions.
- Top with chopped fresh dill.
- Serve with slices of pepper, cucumber slices, or your favorite cracker or crostini.
