Savory Whipped Cottage Cheese

Savory Whipped Cottage Cheese

Servings 1.5 cups

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red onion, thinly sliced
  • ¼ cup grape tomatoes, sliced in half lengthwise 
  • cups full-fat cottage cheese
  • ¼ tsp Kosher salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground cayenne pepper (optional)
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
For serving
  • Sliced bell peppers
  • Cucumber slices
  • Crostini

Instructions

  • In a small skillet, add the extra virgin olive oil and heat over medium heat. Add the onions and sauté for a minute. Add the halved grape tomatoes, lower the heat if needed, and cook tomatoes until soft. Remove from heat and set aside. 
  • In a mini food processor, add the cottage cheese, salt, pepper, garlic powder, onion powder, ground cayenne pepper (if using), and lemon juice.
  • Blend for about 1 minute or until the mixture is smooth and creamy. 
  • Transfer the cheese mixture to a small serving plate or bowl. Use a spatula to smooth the top of the cheese mixture. 
  • Spoon the cooked tomato and onion mixture on top of the smoothed cheese. Use the reserved oil in the skillet to drizzle over the cooked tomatoes and onions. 
  • Top with chopped fresh dill.
  • Serve with slices of pepper, cucumber slices, or your favorite cracker or crostini.
