Spicy Caesar Dressing with Toasted Panko

Ingredients

Spicy Caesar Dressing
  • cup Greek yogurt
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 2 tbsp fresh lemon juice (about ½ lemon)
  • ½ tsp Dijon mustard 
  • ½ tsp Worcestershire sauce
  • ¼ tsp anchovy paste (optional)
  • 1 tbsp Sambal (Chinese chili sauce)
  • cup Parmesan cheese, grated 
  • Pinch of sea salt
  • Ground black pepper 
  • 1 head of Romaine, washed and chopped
Toasted Panko
  • 1 cup plain panko
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • 1 tbsp parsley, fresh or dried

Instructions

  • For the dressing, combine the first eight ingredients in a medium-sized mixing bowl and whisk to combine. Add the grated cheese, stir, and season with sea salt and black pepper. Set aside. 
  • In a small skillet over medium heat, add the panko, garlic powder, onion powder, and black pepper. Toast in the skillet while stirring so the panko evenly browns for about 5 minutes. Remove from heat and add parsley. Stir to combine and let cool. 
  • Combine the Romaine with the desired amount of dressing. Toss and add more dressing if desired. Top with toasted panko and serve.
