If you’re in search of your new favorite summer cocktail then look no further
Originally inspired by famous Eastern Standard Cocktail by Soho House, this refreshing cucumber, mint and lime cocktail is the perfect drink to sip on as the days get warmer. Our version of this cocktail is better for you and it uses vodka instead of gin.
We love this recipe because instead of a refined sugar-based simple syrup we swapped in an agave simple syrup — Agave has a glycemic index that is 40 percent lower than refined sugar and you can quickly make up a batch to have on hand for better-for-you cocktails.
To make your agave simple syrup: Simply combine equal parts agave nectar and hot water and stir to dissolve. Let cool completely before using. Store in the refrigerator between uses for up to one month.
The Cucumber Standard
Ingredients
- 1 fl oz vodka (we used Titos)
- juice of one large lime
- 3/4 fl oz agave simple syrup
- 3 thin slices of cucumber
- 3 mint leaves
Instructions
- Combine all ingredients in a cocktail shaker and shake well. Double strain into a cocktail glass and garnish with a floating cucumber slice.
