Camila’s Grilled Watermelon with Feta and Balsamic Reduction

You’re making a summer dinner and realize that you are falling a little short on the food …. We have all been there!!

Today I wanted to share with you all one of my go-to summer dinner hacks: Grilled Watermelon with Feta and Balsamic Reduction. I love making this dish because it is SO easy to do (it only takes minutes!), and everyone enjoys it.

But first, let’s cover the basics on how to pick a good watermelon! Check out the video below for my tips on how to make sure you are getting a fresh and juicy watermelon:

Now that you know how to pick a winner, let’s get to the recipe. When I tell you guys this is easy, I mean it is easy. Like whip it up in a few minutes kind of easy (and who doesn’t love that?).

Grill the watermelon on the stove top, or on the BBQ — Both options work great for this dish. Cook for just a couple of minutes on each side until you get it nice and charred.

The other great thing about making this dish is that you can serve it at any point during the meal… Try it during appetizers, with dinner or even as a late-night snack.

To serve, I love to top mine with some fresh mint or whatever herbs you have in the house.

Grilled Watermelon with Feta and Balsamic Reduction

Ingredients

  • Sliced watermelon
  • Feta Cheese, crumbled
  • Balsamic reduction

Instructions

  • On the grill or in a grill pan that is heated, place each slice of the watermelon down and grill for a couple of minutes until you seethe grill sear marks.
  • Place all grilled slices of watermelon on a large platter.
  • Sprinkle with Feta cheese crumbles and drizzle the balsamic reduction over all watermelon slices and Feta.
  • Serve immediately and enjoy!
