Summer, kids, popsicle season - super easy!
Summer is here and that means two things: First, the kids are home, and second, it’s popsicle season! At WOT we make this Kiwi popsicle recipe all the time with the kids, and they absolutely love it. We love it because it is only three ingredients, can be done quickly, and is a healthier alternative to store-bought frozen treats. These treats are a big win!!
Kiwi Popsicles
Ingredients
- 4 ripe kiwi (peeled)
- 1 cup dark chocolate
- 1/3 cup coconut oil
- 8 popsicle sticks
- sprinkles optional
Instructions
- trim off the ends of each kiwi and slice the piece you have left in half. Making two 1” round pieces
- remove the peel from the kiwi
- gently insert popsicle sticks into each piece of kiwi
- place all 8 popsicles on parchment paper and freeze for approximately 4 hours
- in a microwave-safe bowl, combine the chocolate and coconut oil and heat for 45-second intervals until the chocolate is melted and the coconut oil is well combined
- The mixture will be thin. Cool mixture to room temperature
- Remove frozen kiwi popsicles from the freezer and using a spoon or small ladle, coat the popsicles on both sides. The chocolate will harden quickly
- add sprinkles if desired
- Serve immediately or place back in the freezer to serve later
