High-Protein Cottage Cheese Chocolate Fudge
Ingredients
- 2¼ cups full-fat cottage cheese
- ⅓ cup cocoa powder
- 1 tbsp coconut oil (melted)
- ¾ cup dark chocolate chips, melted in a double boiler
- 2 tbsp honey or pure maple syrup
- flake salt
Instructions
- Line an 8x8 baking pan with a parchment paper sling.
- In a blender, add the cottage cheese, cocoa powder, and melted coconut oil. Blend until smooth.
- With the blender running on low, add the melted dark chocolate to the mixture. Blend until combined.
- Pour into an 8x8 parchment-lined pan.
- Freeze for 2 hours, cut into desired size pieces, and sprinkle with flake salt.
- If serving immediately, let pieces rest at room temperature for 10-15 minutes and serve.
- Return any leftover fudge to the freezer.
