Melted Brie Salad

Warm melted brie, crisp greens, and a touch of honey.

If you’re looking for a salad that feels a little elevated but still easy, our Melted Brie Salad delivers! Creamy brie gently melts over toasted rustic bread, while a drizzle of honey adds just the right touch of sweetness.

Paired with crisp spring greens and a bright Dijon vinaigrette, every bite balances warm and cool, rich and refreshing. It’s the kind of dish that looks impressive on the table but comes together with simple ingredients, making it perfect for spring dinners, brunch, or a light holiday starter.

Melted Brie Salad

Servings 2

Ingredients

Salad Ingredients
  • 2 cups spring mix lettuce
  • 1 cup arugula
  • 1/2 cup grape tomatoes, halved
  • 2 slices of crusty bread
  • 4 slices of Brie cheese (use your favorite kind)
  • 1 tbsp honey
  • 1 tbsp parsley, finely chopped 
Dressing Ingredients
  • 1 garlic clove, minced
  • 2 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 1/8 tsp Kosher salt
  • 1/2 cup extra virgin olive oil

Instructions

  • In a small food processor or a jar, combine all the dressing ingredients and blend or shake until well incorporated.  
  • In a mixing bowl, combine the spring mix and arugula, use a couple of tablespoons of dressing, and toss to lightly coat. Set aside. Reserve the balance if you want to drizzle extra over the ingredients.
  • Place the two slices of your favorite crusty bread on a broiler pan, and top each with two slices of your favorite Brie cheese. Broil until cheese is melted and bubbly. 
  • Plate the dressed mixed greens on two plates and spoon the sliced grape tomatoes on the side of each plate. 
  • Top each salad with slices of bread and melted Brie, then lightly drizzle honey over the Brie.
  • Garnish with finely chopped parsley and serve immediately.
