One Pot Vegan Thai Chickpea Curry

Discover the story
Get ready for a dish that is packed with flavor and takes very little effort to make!

Straight out of the WOT test kitchen is this delicious vegan dish that might just become your new favorite go-to meal. The sauce is what makes it outstanding (in our opinion), and the best part is that aside from the rice, it can all be done in one pot!

This curry is packed with flavor, not spice — But, you can certainly spice it up if you want to (just add chili flakes). You can also make this your own and switch up, add or change any of the veggies.

Another option is to add a protein like tofu or chicken if you desire.

Note: This recipe is gluten free, just be sure to use a gluten free tamari instead of soy sauce.

If you are set on keeping this recipe vegan, be sure and read the label on your red curry paste. Not every brand of red curry paste is vegan. We suggest using Thai Kitchen brand.
