Don't know what to do with a pomegranate? Try this!
This is an amazing salad we turn to time and time again. What makes it so fantastic is the pomegranate – it adds such an incredible flavor! Whether you just make it for dinner or add it to a special event or holiday menu, you are sure to love it.
Pomegranate Arugula Salad
Ingredients
- 1/2 lemon, juiced
- 2 tbsp. honey
- 2 tbsp. red wine vinegar
- 1/4 cup olive oil
- Kosher salt and freshly ground pepper to taste
- 6 cup arugula, lightly packed
- 1 shallot, sliced
- 1 pomegranate, seeds only
- 1/4 cup Parmigiano-Reggiano shavings
- 1/4 cup walnuts, toasted
Instructions
- Combine lemon juice, honey, and vinegar in a mixing bowl and whisk to combine.
- Slowly drizzle in olive oil while you whisk to emulsify.
- Season to taste with salt and pepper.
- Toss arugula and sliced shallots with vinaigrette and top with pomegranate seeds, cheese, and toasted walnuts.
