Spooky Eyeball Meatballs

Just be sure to mince the onion and garlic very finely, that’s the secret to  evenly textured meatballs.

Here’s how to turn this classic meatball recipe into something spooky:
Once your meatballs are cooked, gently top each one with a mozzarella “eyeball” and an olive “pupil” for a playful (and slightly creepy) finish that’s sure to be the hit of your Halloween spread.

Classic Meatballs

Servings 14 meatballs

Ingredients

  • 1 lb ground beef
  • 1/2 lb Italian sausage
  • 1/4 cup milk
  • 1/4 cup Italian-style breadcrumbs
  • 1/4 cup yellow onion, minced
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp Italian seasoning
  • 1 tbsp garlic, minced
  • 1 egg

Instructions

  • Mix all ingredients in a large bowl until well combined.
  • Portion mixture into 14 meatballs, about 2 oz each.
  • Heat a large skillet over medium heat. Sear meatballs on all sides until browned.
  • Pour your favorite sauce over the meatballs. Cover and simmer on medium-low for about 20 minutes, until fully cooked through.
  • *Add a splash of stock or water if the sauce thickens too much.
  •  Enjoy over pasta, with crusty bread, or on their own!
