Looking for a healthier way to enjoy salted caramel ice cream? Our Salted Caramel (N)ice cream is the perfect choice. This is a no-churn recipe that swaps heavy cream for whipped cottage cheese, giving you all the creamy texture with added protein.
Sweet date pieces blend in to mimic ribbons of golden caramel, creating that classic salty-sweet flavor you crave.
It’s rich, nostalgic, and satisfying, but still light enough to enjoy any night of the week. Perfect if you’re curious about the cottage cheese ice cream trend or simply want a better for you dessert!
Salted Carmel (N)ice Cream
Ingredients
- 1 cup cottage cheese
- 1½ tbsp maple syrup
- 1 tsp vanilla extract
- ⅛ tsp sea salt
- 3 Medjool dates, pitted and lightly chopped
Instructions
- In a small food processor, add the cottage cheese, maple syrup, vanilla extract, and sea salt. Process until smooth.
- Remove the lid and add the pitted and lightly chopped Medjool dates.
- Cover with the food processor lid and lightly pulse to incorporate the dates into the mixture.
- Transfer the mixture to a freezer-safe container and let it freeze for 1 hour. Then, stir it to prevent icing. Freeze for one more hour, stir, and serve.
- If making ahead, follow the above instructions and remove the dish from the freezer. Let it rest at room temperature for 20 minutes before scooping and serving.
