Cocktail Hour: St. Paddy in the Tropics

St. Patrick’s Day is coming right up, and instead of just going for typical drinks like whiskey or beer this March 17th, we thought we would come up with a much more interesting drink option for you. So, we turned to our friend, the Liquid Chef Rob Floyd and asked him to create something for us … And what he came up with does not disappoint! Rob made a delicious and festive St. Patrick’s Day cocktail that will please any Irish palette —  A great mix of both sweet (with pineapple) and tart (with ginger and whiskey), this cocktail is very refreshing and easy to make at home.

St. Paddy in the Tropics

Ingredients:
2 slices of fresh cut ginger
2 oz. of fresh pineapple soaked in Irish Whiskey
1 oz. of lime juice
.75 oz of simple syrup
2 oz of ginger beer
Directions:
Soak cut pineapple, fresh cut ginger in Irish whiskey for at least 48 hours.
Muddle 2 slices of ginger in a mixing tin. Add Whiskey lime and simple syrup. Shake vigorously with ice and pour into copper mug or large rocks glass. Top with ginger beer and add pieces of the pineapple that have been soaking in whiskey to the cocktail. Garnish with something fun and green. Here I used Rosemary so it gives it a great nose to the cocktail.
