Apple Pie Bites

Because why not have pie any time you feel like it… Straight out of the WOT Test Kitchen today comes this recipe for Apple Pie Bites. If you are looking for a tasty and cozy bite-sized desserts to make for your next gathering, this recipe is for you! They are the perfect blend of sweetness and crunch, and the mini size makes them the perfect treat to serve at a party. These also freeze well and are easily reheated in the oven. Perfect for when you have an apple pie craving or if you want to make ahead.

Before you assume that this recipe is hard to make, don’t get intimidated! In just a few simple steps you create the perfect balance of flaky puff pastry, tender apple slices, and a hint of cinnamon sweetness! Seriously, you will wonder how something so tasty can be so easy to whip up.

Apple Pie Bites

Servings 8

Ingredients

  • 8 4x4 squares of puff pastry dough
  • 2 medium baking apples, peeled and thinly sliced
  • 2 tbsp sugar
  • 1 tbsp water
  • 1 tbsp butter
  • ½ tsp cinnamon
  • 1 tsp cornstarch 
  • 1 tsp water
  • 1 egg beaten (for the egg wash)
  • 1 tbsp sparkling sugar (optional)

Instructions

  • Preheat oven to 400 degrees F.
  • Combine the thinly sliced apples, sugar, 1 tbsp water, butter, and cinnamon in a medium saucepan over medium heat. Cook for 5 minutes or until apples are tender.
  • In a small dish, combine a teaspoon of cornstarch and a teaspoon of water. Add to the apple mixture and cook for 2 minutes or until the apple mixture begins to thicken. Remove from heat.
  • Add a small amount of the apple pie filling to 4x4 puff pastry. Fold over, seal with the back of a fork, and place on a sheet pan.
  • Brush each apple pie bite with egg wash and sprinkle a pinch of sparkling sugar (optional) over each piece.
  • Bake in preheated oven for 8-10 minutes or until golden brown.
  • Serve immediately.
  • **These can also be frozen and reheated in a 375 degree oven for 10 minutes.
