If you aren’t familiar with hot smoked salmon, you can find it in the seafood section of most grocery stores!

Arugula Salad with Hot Smoked Salmon and Sherry-Maple Dressing
Ingredients
- 4 oz wild arugula
- 1 tbsp dried cranberries
- 2 tbsp toasted pecans
- 1 tsp toasted sesame seeds
- 2 tsp green onion sliced thin
- 1-2 tbsp crumbled goat cheese
- 4 oz hot smoked salmon (flaked into medium sized chunks)
- 1-2 oz Sherry-maple dressing (recipe below)
Instructions
- Reserve the salmon, sesame seeds and goat cheese.
- Toss remaining salad ingredients in 1-2 oz dressing and plate your salad.
- Sprinkle plated salad with sesame seeds and goat cheese.
- For a rustic presentation, arrange salmon chunks on top of salad and sides of plate.
Sherry-Maple Dressing
Ingredients
- ½ cup olive oil
- ½ cup aged sherry vinegar
- 3 tbsp maple syrup
- 1 tsp whole grain mustard
- 1 tsp minced shallot
- 1 tsp grated ginger
- 1 tsp salt
- 1 tsp black pepper

- Mix all ingredients together.
