Chickpea Cookie Dough Bites

Meet these delicious Chickpea Cookie Dough Bites from our friends at Rily! Packed with the goodness of chickpeas, they’re a better-for-you alternative to traditional cookie dough.

These tasty little bites offer the perfect combination of sweetness and nutrition and are great for snacking or as a healthier treat. For even more of a protein boost, you can also add collagen or protein powder!

Chickpea Cookie Dough Bites

Equipment

  • Food processor or blender

Ingredients

  • 14 oz can or 1.5 cups of cooked chickpeas (unsalted) rinsed and drained 
  • ¼ cup nut butter 
  • ½ cup oat flour
  • ¼ tsp ground cinnamon
  • ¼ tsp kosher salt
  • tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • cup mini chocolate chips
Optional
  • ¼ cup collagen
  • * If you want to add protein powder only use ¼ cup of flour
Chocolate Coating
  • 1 bar of quality dark chocolate or 3/4 cup of bitter dark chocolate chips
  • ½ tbsp coconut oil 

Instructions

  • Combine everything in a food processor, excluding the chocolate chips and coconut oil. Blend until smooth. Mix in the chocolate chips and add to the fridge for 15 mins. 
  • Form walnut-sized balls with the dough and place on a tray lined with parchment paper. If the dough is too sticky feel free to add a little bit more flour. Then freeze the balls for 30 minutes. 
  • Melt chocolate and coconut oil in the microwave or double boiler.
  •  Dip each ball in melted chocolate, top with flaky salt then freeze for 10 more minutes until the chocolate hardens. Keep in the fridge.
