Meet our Pulled Pork Tacos! If you’re looking for a delicious recipe that’s easy to make and quick to pull together, this one checks all the boxes. Using leftover or deli-bought pulled pork, this recipe comes together in minutes and is anything but ordinary.

Topped with sautéed bell peppers, onions, creamy avocado, and a spoonful of your favorite salsa, you’ve suddenly got a taco that tastes like it came straight from a street-side stand.

In the Test Kitchen, we love using our Easy Slow Cooked Pulled Pork to make this even easier the second time around. It is simple, satisfying, and a great way to turn leftovers into something everyone gets excited about.
Pulled Pork Tacos
Ingredients
- 1 cup prepared pulled pork
- 2 tbsp olive oil
- 1 large, red, or sweet yellow onion, peeled and thinly sliced
- 2 bell peppers, seeded and thinly sliced
- Kosher salt
- Black pepper
- 1 cup shredded cheddar cheese
- 12 6” tortillas
- Salsa
- Avocado slices
Instructions
- In a skillet over medium heat, add the olive oil and thinly sliced onions. Sauté until onions are translucent.
- Add the thinly sliced bell peppers and cook until soft. Season with Kosher salt and black pepper and set aside.
- Warm the prepared pulled pork, then transfer it to a serving dish.
- Warm or slightly char the soft tortillas and place them in a serving dish.
- To assemble, place the warmed tortilla shell on a plate, top with the desired amount of pulled pork, then add the sauteed peppers and onions, and finish with a little shredded cheese.
- Additional topping suggestions include diced avocado and your favorite salsa (We used our Easiest Salsa recipe).
