If you are looking for a great side dish then look no further than this Sheet Pan Zucchini with Feta — It’s quick, easy to make and healthy and we are willing to bet you will love it as much as we do!

The key to this sheet pan zucchini is using a mandolin to slice the zucchini in very thin slices. This allows the zucchini to cook quickly and excess moister evaporated quickly in the hot oven. The zucchini will still have a little crunch and we like enjoyed these straight out of the oven or even at room temperature.

Sheet Pan Zucchini with Feta

Servings 4


  • 5 small zucchinis, thinly sliced (we used a mandolin)
  • 1.5 tbsp extra virgin olive oil
  • salt
  • pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp oregano
  • 1/3 cup feta crumbled


  • Pre-heat oven to 400 degrees F.
  • On an unlined baking sheet, add the thinly sliced zucchini, olive oil, salt, pepper, garlic powder, and oregano. Gently toss to combine and then spread evenly on the sheet pan.
  • Top with the crumbled Feta and place on the middle rack ofthe preheated oven.
  • Bake for 8-10 min of until Feta is golden brown.
  • Serve immediately or at room temperature.
