Spicy Mussels with Chorizo

It’s that time of year when mussels are easy to find at the store! So today, we’re bringing you our Spicy Mussels with Chorizo – a dish that combines the delicate flavor of mussels with the hearty and slightly spicy kick of chorizo. And the best part is that this meal can be served in less than 30 minutes!

We made ours even more savory by adding Gruyere cheese and red pepper flakes, but you can leave them out if you prefer.

Serve this with a salad and French bread (the best for dipping in the sauce!), and you have a complete meal!

Spicy Mussels with Chorizo

Servings 4

Ingredients

  • 3 tbsp butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 16 oz fresh chorizo, casing removed
  • 1 tbsp tomato paste
  • 1 tsp red pepper flakes (optional)
  • 1 cup white wine
  • 2 lbs fresh mussels, scrubbed, soaked and drained
  • cup Gruyere Cheese, shredded (optional)
Garnish
  • Fresh chopped parsley 
  • Red pepper flakes (optional)

Instructions

  • In a large saucepot or Dutch oven, melt the butter and sauté the chopped onions until soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute.
  • Add the chorizo to the onions and cook until the sausage loses its raw color, about 5 minutes. 
  • Add the tomato paste and red pepper flakes, and then turn up the heat to high and cook for a minute. 
  • Lower the heat to medium, add the prepped and drained mussels. Fold the mussels into the cooked chorizo. 
  • Add the white wine and allow the mixture to bubble for a minute. 
  • Cover to steam the mussels and the mussels open, 4-5 minutes.
  • Sprinkle the grated Gruyere cheese over the top of the cooked mussels. Cover with lid for one minute or until cheese is melted.
  • Serve immediately and garnish with chopped parsley and red pepper flakes if desired.
